Oh So Goood!


I grew up in sunny San Diego and to this 
day feel lucky that I did, I loved it! 
I have many wonderful childhood memories and the 
ones that I treasure the most include the time
 I spent with my grandpa and grandma.
That often meant being around the kitchen table listening to
 grandpa's stories and enjoying grandma's amazing cooking.
My grandma could make anything taste great, she was a wonderful 
cook but it was her pies that were heaven on a plate.
 One of my favorites was her lemon meringue
   made with fresh California lemons,  to die for I must say!!!
These past few weeks I have been wanting to go back to San Diego 
and get my "California Fix" and have been craving lemon everything! 
I do not usually make lemon pies because I am the only one in my
 family that really loves it and trust me if I make a whole pie 
I would eat it! (It's a close second to the drumstick!)
So when I stumbled upon this easy recipe for mini pies I had to try it. 
OH MY OH MY WHAT A YUMMY PIE!!
Even Joe, who has not eaten lemon ANYTHING in over 
13 years (a story for another day:)
 He loved it and asked if I would make them again.
 SUCCESS! 
Look at that meringue, my granny would be so proud:)

Skinny Cow

In the back of my mind it has been there taunting me for
 19 years....ONE day it WILL happen! My daughter will
 get married and I will be the MOB! (mother of the bride)
Along with that nagging thought 
was the deep desire to be on that day, wearing the 
same size dress I wore BTC. (before the children)
It is with a reluctant heart and a growing
 width that I gave into the knowledge that I should 
wake up to reality because it isn't EVER going to happen!!! 
So I have decided to reach for the next best wish, trying to
 at least not be the HUGE MOB or in other words,
not have to order my dress from a tent maker!! 
Along with wanting to look good when that day does arrive, 
(and lets hope it is not for another three or four years) 
I also want to be healthy! I want to live as long 
as I can so that I can annoy my children and 
Joe as long as possible! 
(It is my mission you could say:)
In an attempt to be healthy and TRY to be slimmer at 
the same time I have ventured out into the world of health 
food as some would call it, I call it good food, the 
 kids and Joe just call 
it mom's gross junk!  But not anymore !
I must first say that 
I truly only have one HUGE junk food weakness!
 I can pass up many things, cookies, cake, pies,
 candy,  NO problem I can be strong! 
But if the secret service wanted information from me? 
Put away the torture treatments and dangle a Nestle Drumstick 
in front of me..... I will tell ALL!!
 It has been my weakness since as long as I can remember! 
Joe knows this and has used it to his advantage many times:)
Beside the fact that they will make me weak at the knees, they 
make my hips grow faster than a weed!
You can imagine my genuine euphoria when I stumbled upon 
these beauties, the SKINNY COW cone.......YUM!!
  Just the name makes my insides shout
 with joy, "this losing weight is not so bad" 
(I haven't lost an ounce but hey I"ma tryin!) 
So now I can stand strong against the power of the Drumstick 
and say" get back with you and your dirty  
360 calories and 23 grams of FAT!"
 I have found MY skinny!!! 
That is, my Skinny Cow cone and with only 150 calories 
and 3 tiny grams of fat
I am no longer weak! 

NOW the only problem I have is keeping Joe and 
the boys AWAY from them! 
Unlike my other healthy foods, they love them too!
 Sad to say it but this has resulted into using Katie's old technique, 
HIDING the cones in the freezer!
 So if you happen to come over and catch me "freezer diving"
 you will know not to mess with me,  I will be going for a 
Skinny Cow Cone and a little personal euphoria:)
